Oh boy, you jumped from one end of the world to another. I can tell you about Indian rice pudding.
You soak 1/4 cup rice. Boil 2 & 1/2 cup heavy cream. When it comes to a boil, lower the heat. Stir and cook for some time. Drain the rice, add them in the boiling milk. Keep stirring. When the rice is completely cooked (soft), add sugar. At this point you will have the milk reduced and thick.
Add 1cup of sugar. You can always determine the sweetness by adding little sugar at a time. Taste for sweetness, if you don’t like the pudding too sweet, you can always stop adding sugar.
Grate some lemon zest and sprinkle over the rice pudding.
